Cooktop or rangetop: the difference that decides the repair

A cooktop drops into a hole cut in the countertop and is operated from its own cooking surface. A rangetop is a range with the oven taken away: a full-depth appliance sitting on a base cabinet, wearing a stainless front, operated from knobs on that front. Wolf builds both, along with ranges, wall and steam ovens, warming drawers and ventilation, and no refrigeration of any kind, which is Sub-Zero's half of the kitchen. The distinction is worth ten seconds of your attention because the two appliances open from opposite directions, carry different hardware, and produce different fault lists. Saying the wrong one on the phone sends a technician out with the wrong plan.

Telling them apart in ten seconds

Look at where the controls are. On a cooktop they belong to the cooking surface: knobs along the front edge of the deck itself on gas units, or touch controls printed onto the glass on induction and electric radiant. The appliance ends where the countertop begins, the counter runs continuously past both sides, and underneath is a cabinet or a drawer. On a rangetop the controls sit on a vertical panel below the cooking surface, because the appliance has a face. There is a stainless body occupying the full depth of the cabinet, the cooking surface stands proud of the surrounding counter rather than sitting flush in it, and there is usually a low back trim or an island trim behind. If there is an oven door directly beneath, it is neither: it is a range, one appliance with one model number, and the cooking surface is not separable from the oven below it. And if the surface is unbroken glass with no burners at all, it is electric rather than gas, and it is worth knowing which of the two: on a radiant top the element glows red through the glass and the surface stays hot well after it is switched off, while on induction nothing glows, the glass only picks up heat back from the pan, and a cooling fan runs whenever a zone is working. Neither one shares much with a gas surface beyond the countertop it sits in.

They open from opposite directions

This is the part that decides how a visit actually goes. A cooktop is serviced from above and below. Grates and burner caps lift off, the top itself can usually be released and raised to reach the valves, the ignition module, the wiring and the manifold, and whatever is left is reached through the cabinet or the drawer underneath, which normally has to be emptied and sometimes removed. On induction and radiant cooktops the components live in a shallow box directly beneath the glass, and the glass is not a part anyone takes chances with. A rangetop opens from the front. The knobs pull off, the control panel comes away, and behind it sit the valves, the manifold, the ignition wiring and on many units the module. For anything deeper the appliance has to come forward out of its opening, which means disconnecting a gas line and handling something heavy with a finished front, sitting between two runs of expensive counter. That is a materially different job from lifting a cooktop deck, and it is why the answer to which one you own changes both the time booked and what a technician brings.

Hardware a rangetop has that a cooktop does not

A rangetop is professional-class cooking equipment and it is built with modules a drop-in cooktop generally does not carry. An infrared charbroiler is a burner firing a radiant surface, with its own gas circuit and its own ignition. A griddle is a thick plate heated by its own burner and governed by a thermostat sensing plate temperature, so it fails in ways a burner never does: heat that is uneven across the plate, a plate that will not hold a set temperature, a control that reads correctly while the surface cooks at the wrong number. A French top, on units specified with one, is another separate heating arrangement again. All of these are chosen at purchase, which means two rangetops of the same nominal width can have completely different service histories. The surface burners differ too. Sealed brass burners on professional gas surfaces are built with two tiers of ports so a single burner can hold both a hard sear and a genuine low simmer, and that geometry only works when the cap is flat, dry and seated in its correct orientation. A drop-in gas cooktop's fault list is short by comparison: burners, electrodes, a module, valves and a regulator.

Gas, induction and radiant are three unrelated fault lists

Cooktops come in gas, electric radiant and induction, and knowing which you own deletes most of the possible faults immediately. On gas the complaints are ignition that clicks without lighting, a burner that will not hold a low flame, and a flame burning yellow or lifting off its ports, and the first cause is usually sitting on top of the burner base rather than hidden inside the appliance. On radiant electric it is an element gone open circuit, a control that has stopped cycling it, or a cracked glass top, and a crack takes the appliance out of service the same day because that surface is also what keeps spills away from the wiring. Induction has no burner at all: a coil under the glass induces current in the pan itself, and the electronics doing that produce real heat, so an induction cooktop has a cooling fan and needs a genuine air path through the cabinet beneath. A drawer packed to the back, a solid panel across the cabinet opening or a blocked vent will make a zone throttle back or shut down, and that reads from the front exactly like failing electronics. Pan detection is the other one: a zone will not run for a pan that is insufficiently ferrous, or one whose base has warped away from contact with the glass.

What is worth checking yourself, and what is not

Above the burner base is owner territory on a gas appliance. Caps and grates lift off, ports can be cleared with something that will not enlarge them, and a cap put back a few millimeters out of position or upside down after a cleaning is a leading cause of endless clicking and a poor flame. Everything has to be bone dry before power goes back on. On induction and radiant the useful owner check is the air path: open the drawer beneath, look for whatever is blocking the vent, and look honestly at the pan you are using. Below the burner base on gas, meaning the manifold, the orifices, the regulator, the valves, the ignition module and its wiring, is technician work. A gas train is not a place to improvise, and a wrong orifice produces a flame that looks acceptable and is not. Nobody should be levering at cracked induction glass, and nobody should be working on a rangetop pulled part way out of a cabinet with the gas still connected. When you do book, lead with the answer to the question at the top of this article, and mention which modules are fitted.

  • Owner: caps, grates, ports, drying the top thoroughly, and the air path under an induction or radiant unit
  • Technician: manifold, orifices, regulator, valves, ignition module, and anything requiring the appliance to move
  • A cracked glass top takes a radiant or induction unit out of service until it is replaced
  • Say cooktop or rangetop when you book, and say whether a griddle or charbroiler is fitted

Why the two are not interchangeable in a remodel

Owners often meet this distinction at the worst possible moment, which is halfway through a kitchen. A cooktop needs a shallow cutout in the counter and leaves the cabinet below usable, frequently as a drawer. A rangetop consumes that cabinet: the counter is cut back to the full depth of the appliance, the unit rests on a supporting base built to a stated height, and clearances to surrounding combustible surfaces are set by the manufacturer rather than by whoever is building the joinery. Ventilation is not equivalent either, since a professional gas surface with a charbroiler or a griddle throws far more heat and grease at a hood than a drop-in cooktop does, and the hood has to be sized and mounted for the appliance underneath it. Induction changes the question in a different direction: it is not a gas appliance at all and it wants a dedicated high-amperage circuit that a gas kitchen was never wired for. None of that is a repair, but all of it turns up as service calls, because an appliance behaving exactly as designed inside an installation that is fighting it looks broken from the front.

The knobs are off for cleaning. How do I tell which one I have?

Look at the front of the appliance rather than the top. A rangetop has a vertical control panel with knob shafts and bezels standing out of it, a stainless face and a full-depth body, and the countertop stops at the appliance rather than passing behind it. A cooktop either has its knobs on the deck at the front edge of the cooking surface or has no knobs at all, and the counter continues past it on every side. If there is an oven door underneath, it is a range.

Does Wolf make refrigerators?

No. Wolf is the cooking half of the kitchen: ranges, rangetops, cooktops, wall and steam ovens, microwaves, warming drawers, ventilation and outdoor grills. Refrigeration is Sub-Zero and dishwashers are Cove. The three names share a parent company and very often share a kitchen, with matching panels and handles, which is exactly why owners assume they are one product line. For a service call the distinction matters, because a Wolf badge on a warm appliance means the warm appliance is not the Wolf.

Can a rangetop be swapped for a cooktop in the same opening?

Not as a straight exchange. The two need different cutouts, different cabinet depths and different support, and a rangetop takes the cabinet space that a cooktop leaves as a drawer. Going the other way leaves a gap where the rangetop body used to be and a counter that no longer meets the appliance. Ventilation requirements differ as well. It is cabinetry and countertop work with an appliance install at the end of it, and it is worth pricing that way rather than as an appliance swap.

My griddle heats unevenly across the plate. Is that normal?

Some variation from front to back is expected on any griddle, but a cold zone or a plate that will not reach the set temperature is a fault. The usual causes are the thermostat or sensor reading the plate incorrectly, a burner beneath the plate not firing evenly across its length, or a plate that has warped and lost contact where it should be conducting. It is also worth checking that the appliance is level, since a griddle that runs downhill pools fat at one end and reads as uneven heat.

One induction zone stopped working and the rest are fine. What is that?

Start with the two free checks. Try a pan known to work on another zone, since pan detection is zone-specific and a warped base can lose contact on one coil while working on another. Then look at the ventilation beneath the appliance, because an overheating unit will shut down a zone before it shuts down everything. If the pan is right and the air path is clear, the fault is generally in that zone's coil or the inverter section driving it, and it needs the appliance opened from below.

Why does a technician ask for the model number when I have already said it is a Wolf cooktop?

Because the cooktop line covers gas, electric radiant and induction builds that share almost no parts, in several widths, with different burner and zone arrangements. The model number resolves which of those is in your counter before anything is loaded on a van, and the serial number resolves which revision of it you own. On appliances that have been in production a long time, two units with the same model number can take different control parts, which is a wasted visit waiting to happen if nobody checks.

Do you work on wine cabinets and undercounter ice machines built into island and bar joinery?

Yes, and in this town they account for more of the workload than the refrigerator alone would suggest. Wine columns, undercounter cabinets, beverage centers, refrigerator drawers and ice machines all take air in at the floor and reject heat there too, so the first measurement is clearance: a base grille shut in behind a run of toe kick, a return panel or a stone waterfall added after the appliance was specified leaves the machine recycling its own exhaust. On a wine cabinet the temperature that counts is the one in the racks, taken with a probe. On an ice machine the cube itself says whether the fault is on the water side or the harvest side.

The display shows the temperature I set, so why is the food warm?

Because the display reports its sensor, and the sensor sits in one spot that the circulating air reaches easily. Let ice build on an evaporator, or let air stop being distributed the way the cabinet was designed to distribute it, and the sensor can be perfectly accurate while the shelf above it runs several degrees warmer. So readings are taken with a probe where the food actually sits, top and bottom of the cabinet, and the manufacturer's numbers, 37 to 40°F in the refrigerator and 0°F in the freezer, are confirmed that way before the grille goes back on.
